Henry promised Paloma, our next door neighbour and most wonderful babysitter, a cupcake. That's why we have cake, again, in our house. Our house that theoretically is pretty much sugar-free. And frankly, hooray.
These are our reason to celebrate:
Lemon Poppyseed Cupcakes
125g butter, softened
1 cup sugar
2 eggs
2 cups self raising flour
1/2 cup poppyseeds
3/4 cup lemon juice (I think I used 5 lemons)
2 tblsp plain yoghurt
Cream butter and sugar. Add both eggs and beat. Stir in flour and poppyseeds. Add lemon juice and mix well. Add yoghurt and mix well. Dollop into patty pans and cook for 20-30 mins in moderate oven (180deg). Makes 12.
Icing: I made a cream frosting with 2 cups icing sugar, 1 tblsp soft butter and 1 tblsp double cream
Oh yes. Seriously contravenes sugar-free-ness! Actually they really didn't need the icing, but damn they were delicious. Henry loves Paloma. And LOVES baking. It's like craft time with edibility. Marvellous.
