desperate dinners; or thrash-cooking

So, you walk in the door at 6pm with two tired and hungry under 5s and you've got to find dinner in under 10 minutes before All Hell Breaks Loose. Eggs on toast? Henry won't eat eggs on their own. Shame, really. And I'm out of baked beans. I haven't bought them because I keep meaning to try a recipe for making my own. Not tonight though.

One thing I usually have in the pantry is long life noodles. I looked, they were there. Not the egg noodles I was hoping for, but udon, they'll do.

So here's what I threw into a pan and amidst Tilly sitting on the kitchen bench nicking grated cheese and Henry scooting behind me nicking sliced ham, the three of us got this on the table in about 7 minutes. And it may not have looked super pretty but it was totally delicious. And they ate it. Hooray.

Eggy Noodles In A Hurry

1 pkt longlife noodles
1 dessertspoon olive oil
1/2 leek (or an onion is great if you don't have leek)
about a cup of mushrooms, sliced
1/2 zucchini, grated
about 8 cherry tomatoes, sliced (or big tomatoes, whatever.)
about 5 slices of ham, cut up finely
3 eggs
1 tablespoon sour cream or fresh cream or natural yoghurt. Depends what's in the fridge.
about half a cup grated cheese (optional)
Boil some water, throw your long life noodles in – they'll take about 2 minutes. Drain.

While you're waiting for your water to boil, cook the leek in the oil in a deep saute pan (or frypan) for two minutes then throw in all the other vegies. Cook for another minute. Add the eggs and keep stirring till they're cooked (about a minute). Add the sour cream and the cheese and keep stirring until you have a sauce. 

Tip in your noodles, stir and serve.
