Some days we make treats we keep and some days you have to tie the small people down as the treats walk out the door. Here is the lovely butter cake with coconut I made for my divine next-door neighbour Clare, who spent three hours hanging all my paintings and prints yesterday. (I've been in this house for four months now.) She also made some inspired furniture rearrangements and the house looks brilliant. Awesome person. Plus we adore her three teenagers so it doesn't get much better. I thought, a cake, at least.
Here are the not so treaty treats I made for Henry and Tilly. I think it was Mum's recipe, good for diabetics (my Dad) due to low sugar and almost no fat. Mum tends to make it as a loaf and uses different bran – I'm a fan of oatbran. And seriously SO EASY.
BRAN MUFFINS
Mix together:
1 cup bran
1 cup self raising flour
1 cup milk
1 cup blueberries
1/2 cup brown sugar
THAT'S IT. Mix, chuck into muffin tray. Works well as mini muffins and works well with any fruit substituted for the blueberries (raspberries v good. Mum usually makes hers with dates.)
Cook in moderate oven for about 15 mins or until firm & skewer comes out clean yada yada.
