Healthy, dairy-free muffins

I have a beloved godson, actually I have three + one beloved goddaughter, but I digress… one beloved small friend who can't have any dairy or he grows a second head. Or his ears fall off. Or something. DISCLAIMER: I am not making fun of people with food intolerances. Some of my favourite people / progeny have food intolerances. 

Anyway, he turns into a cucumber if he eats off a plate that had yoghurt on it yesterday. So I created these muffins for him. Took them to his house on his fourth birthday. And of course he thought they sucked. But everyone else ate them so what the heck. Here's the recipe:

Ashley's dairy-free muffins

Ingredients:
1/2 cup oil
1/2 cup apple juice (I used organic)
2 dessertspoons brown sugar
2 eggs
2 cups plain wholemeal flour
1 tsp baking powder
1 tsp bicarb soda
1 tsp cinnamon
1 tsp nutmeg
1 x 450g tin crushed pineapple, drained
1 cup shredded coconut

Method:

Beat the oil, the apple juice, the sugar and the eggs together in a jug.
 
In a bowl mix flour, baking powder, bicarb and spices together. Add the pineapple and the coconut and stir then stir in the liquid mix. 

Spoon batter into muffin trays and bake for about 20 mins or until golden brown and springy to touch.

Makes 12 muffins or 24 mini muffins.
