homemade muesli

Ah, muesli. Or Granola, depending where yer from. 

I love it love it love it with a love not usually reserved for oatmeal. 

I love it mostly for breakfast and sometimes for lunch. Most recently with a glossy glob of yoghurt but traditionally just with milk. 

You don't really need a recipe for muesli. Every muesli-eater I know has their own, and it's the very best. My Mum makes hers raw, with just grains. My friend Estelle adds cocoa to hers. Adam likes his with dried fruit, mostly apricots and I like it with a handful of almonds and dried cranberries. 

I have always toasted mine on the stove, in a big pan, just turning it till it goes golden.

I reported this method to Estelle who declared me insane and suggested I try baking it in the oven.

Did. Worked a treat. Thanks, gorgeous girl.

So, for the recipe you neither need nor want coz you'll make this however you damn well please…

MUESLI

Ingredients

5 cups rolled oats

½ cup sunflower kernals

½ cup pumpkin seeds

½ cup linseed

2 tsp ground ginger

2 tsp cinnamon

2 tbsp golden syrup 

2 tbsp honey

2 tbsp vegetable oil

 

Warm the golden syrup and the honey up a bit, either in a microwave or on the stove. Then stir all the ingredients together and spread out in a large baking tray (or on two trays, might save you some stirring in the oven.)

Bake for approx 15 mins in moderate oven (180) stirring regularly, until evenly golden. 

Add dried fruit(s) of choice after cooking, nuts can go in with the mix while cooking. 

Store in an airtight jar or container. 

Delicious.
