little crumpet

Ever made your own crumpets?

It kinda does seem like one of those things that might just not be worth the time, right? They come conveniently packaged at the supermarket… but bread does too and there's just something about making your own that I love.

So I thought I'd try crumpets.

They worked pretty well! 

This recipe comes from a book called The $21 Challenge which I'll talk about later this week, it's really good!

INGREDIENTS

1 cup plain flour

1/2 tbsp baking powder

1/2 tsp salt

1/2 tsp sugar

1/2 tbsp yeast (dry)

3/4 cup warm water

METHOD

Put flour, baking powder, salt and sugar into a large bowl and mix together using a whisk. In separate bowl stir the yeast into the warm water with a fork. Pour water and yeast mixture into the dry ingredients and beat together with a whisk until you have a smooth batter. 

Lightly grease large frying pan (preferably one with a lid) and put over a medium to low heat. Grease 6 egg rings, put into pan and three quarters fill each one with batter.

Cook for approx 10 mins, until top of crumpet is covered with holes, then place lid on frying pan and cook for another 3 minutes.

Perfect with butter and golden syrup. Or honey. Or whatever. Delicious.

Did the kids eat them? Well no. 

Henry is really not much of a morning person and I have to work hard to make him a breakfast person at all.

He typically peels himself out of bed, and flops like this on the couch until I can coax him to the breakfast table with a banana smoothie or occasionally tinned spaghetti. 

This one, though:

Bounces out of bed and straight to the breakfast table. 

Good mornings' everyone including Henry's new imaginary friend who lives in his foot (huh?) and cooks herself an egg (with some help.) 

She tips it out of the cup and eats it off this particular placemat.
