marvellous zucchini
My lovely pal Ben gave me this recipe, but unlike my friend Estelle who CAN follow a recipe, I am predisposed to reject instructions and therefore messed with it. But only minorly.
Did the kids eat it?
Well, no.
I served it for dinner to two vegetarian friends (they ate it) and after a fuss Tilly had a vegemite sandwich and Henry ate the salad on the side.
I'm wasted on them.
Ben's DELICIOUS Zucchini Slice (unless you're 2 or 5 and you live at my place)
Ingredients:
2 large grated zucchini
1 chopped onion
1 cup self-raising flour
6 eggs
1 cup grated cheese (and a bit extra)
1 tblsp sour cream
1/2 cup milk
big handful chopped parsley and coriander
salt and pepper
Method:
Mix sour cream, milk and eggs together in a bowl them mix in everything else.
Put into a greased dish and cover with a bit of extra cheese.
Cook for about 45 mins at 180 deg C.
So quick and easy and delicious the next day for lunch.

i was sure zucchini hidden under mounds of melted cheese was the way to do it. huh.
