well, you can guess where I'm going with this.
I've been making bread for a long time, in fact I apparently impressed Adam with a homemade sundried tomato loaf about fourteen years ago on an early come-round-to-my-place-for-dinner-you-sexy-thing date. No recollection. *clears throat.* Oh well, desired effect and all that.
Lately I got out of the habit. I didn't have the energy for all the kneading and although I love my breadmaker and use it often (most often for pizza dough), I don't like the hole in the bottom of the loaf out of the breadmaker (fussy?) and it smells good, but not as great as out of the oven.
Then I found THIS recipe.
No kneading. I don't know why it works, but it does.
And it is EXCELLENT bread.
Can I convince you?
Other than the obvious bits: choose your own flour (I admit I've yet to make a white loaf – we only eat wholemeal.) You know exactly what's in it. No preservatives. No sugar. No sweetener at all (doesn't need it – really, try it!)
And oh my goodness your house will smell divine as it's baking.
And you don't need to knead it. Nope, don't know why it works.
Am going to buy their 2nd book though as I reckon they're onto something.

I make my own too – with help of breadmaker. Really want to make my own sourdough too, but have been put off by having to feed the starter every day and having to take it on holiday with me (so I’m told!), there is a reason I don’t have a child yet…. 😉 ha ha

My case:
uncontrollable urges to ‘make stuff’ at all hours of the day and night
a desire to have too many little people running under foot
the need to make every single thing from scratch, if it kills us
and now the unhealthy obsession with bread making that refuses to die!

I’ve been making my own bread from the beginning of the year and have recently gotten fed up with the daily grind of measuring stuff into the breadmaker to make the dough. I’ve started the 5 min a day bread, however the bread is less “crumby” and more “gluey”. I used entirely wholemeal flour. Yours looks much more “crumby” and lovely. Any tips? In NZ I can’t seem to find unbleached flour. I wondered if using surebake yeast with bread improvers would help. Sorry, don’t mean to go on! 🙂

I had to stop making homemade bread after a while because I’d eat practically the entire loaf and then feel sick and then want some more…
But yours looks so good!

May 12, 2010 at 10:28 pmJust sprinkled it on top. Bread made with wholemeal flour, seed mix was poppy seeds, sesame seeds and oats (i.e. what was in the pantry!) I can’t fault this bread, I just can’t figure it out!! xxx
