Slice of Wednesday: Lazy Lady

I couldn't mention it then not blog it. Ah, Lazy Lady. The slice of my childhood. 

It's the most unsophistocated of slices. Just a simple chewy chocolate slice with icing (one commenter, Meg from Wollongong, has requested a simple chocolate icing-less slice. This is not it, Meg. I'll work on that one.)

Its great bonus as my Mum pointed out this morning when I arrived with it (you think I need slice AND biscuits lying around this house?!) is that you ice it when it's hot, in the baking tray, so you can whip it out and ice it and take it out with you while it's still warm, still in its tray.

So much to love.

Turns out I have actually blogged this recipe before (although it wasn't on my recipe index, my system's a bit hopeless.) And that earlier version was from memory and wrong, this one I dug out of the pile of recipes I took with me when I left home. It's written in my eighteen-year-old writing (a little bit more flowery) and is on the same handwritten page as Hairy Sausages, Armenian cake and my Grandma's scones. How funny. Turns out I've blogged quite a few recipes here, not many of them savory! Sweet teeth. Shocker. 

LAZY LADY

Ingredients

125g butter, melted

1 cup brown sugar

1 egg, beaten

2 tbsp cocoa

1 cup self-raising flour

½ cup desiccated coconut

 

Method

Make this in one saucepan, save the dishes. Melt the butter, stir through the sugar and then then egg. Stir through the cocoa and then the flour and the coconut. 

Spread in a slice tin and cook 15-20 mins at 180°C.

Ice while still hot.

Icing:

1 cup icing sugar

2 tbsp cocoa

2 tsp softened butter

1½ tbsp milk

Mix all together in a bowl and spread on top of warm slice. Sprinkle with coconut.

The cut-off end bits! I grew up with these bits saved for the family while the rest of the slice was given away or taken to a function.
