Corn cakes. Quick, easy, yummo, great for kids.
I made these today for the kid's lunch before I shot out for an afternoon meeting (a.k.a long lunch with workmates) and left these (above, drizzled in sweet chili sauce) for my divine babysitter from next door, Paloma.
Also great with a dollop of sour cream and some crispy bacon.
Corn Cakes
2 cups self raising flour
big pinch seasalt
1 x 125g tin creamed corn
1 x 420g tin corn kernals
1 dessertspoon butter, melted
1/2 x red capsicum, finely chopped
2 eggs
1 cup milk
handful fresh herbs (basil, oregano, thyme all work well)
Throw all the ingredients together in a big bowl. Mix well.
Place spoonfuls onto hot pan sprayed with a bit of canola or olive oil spray.
Cook for about 3 mins each side, or until cooked through.
The kids ate theirs without condiment or rocket. So quick and easy, and delicious. Marvellous.
