The Cake Stall

Henry goes to a totally wonderful pre-school two days a week. We love it. 

They had a monster garage sale this weekend which we were away for (see yesterday's post) but they also had a fundraising cake stall at the event which I volunteered to bake for. 

Of course I made visitor biscuits (above). 

And cakes:

"Vanilla Cake" being Butter cake with 1 teaspoon of vanilla beaten into with the butter and sugar.

Also a few chocolate cakes.

Very simple recipe and I actually think it's much nicer than my previously-claimed most excellent chocolate cake recipe here.

Pretty much a butter cake with cocoa:


SIMPLE CHOCOLATE CAKE


125g butter, softened

1 cup white sugar

2 eggs

2 cups self raising flour

1 cup cocoa

1.5 cups whole milk


Beat butter and sugar until creamed. Beat in one egg at a time.

Stir in one cup of flour. Add one cup of milk. Stir in the cocoa. Stir in the other cup of flour. Stir in the other half cup of milk.


Bake in moderate oven (180deg) for about 30-40 mins or until skewer comes out clean.

The icing I used on Saturday was about a cup of dark cooking chocolate melted with 40g butter. Stir into approx 1.5 cups icing sugar.

They sold like hotcakes!

These are recipes imprinted on my brain. I've made so many hundreds of batches of those biscuits and those cakes that I could do it sleep deprived at 11pm at night after a tricky week and after Adam had left for the race.
