One of Tilly's favourite things is jewelry, the louder the better. Today we made our own.
TORTIGLIONI BOSCAIOLA
One of the things kids will usually eat is pasta. One of our family favourites is Boscaiola. It's so creamy and divine we don't have it that often, but sometimes you just really feel like a luscious delicious pasta. Here's the recipe for our favourite which I make with Tortiglioni because the big tubes work really well and are easy for little forks to pick up.
1 tsp olive oil
1 tsp chopped garlic
handful chopped basil, chives and parsley
1 onion
200g bacon or ham cut into strips
1 cup chopped mushrooms
600ml thickened cream
handful grated parmesan
Heat olive oil, garlic and herbs in a pan. Cook for a bit.
Add some pepper and sea salt and add finely sliced onion (Spanish works well) and about 200g of bacon or ham, in strips. Cook till onion is kind of translucent then add chopped mushrooms.
Cook for a couple of minutes then add a 600ml container of thickened cream (I know, I know, but you don't cook this every night.) Simmer for about 10 mins, then add a handful of grated parmesan and stir.
Leave to stand for a bit before serving (which you usually would with kids anyway to cool it down.)
