That looks great! Haloumi is one of my favourites. But I disagree, you DO need bacon!! Especially with lashings of maple syrup. So unhealthy. So bad. But so yum!

Haloumi, eggplant, mushrooms….. sounds delish! And I agree, no bacon necessary! Maybe an egg on top though…

Yummm, just found this, looking for Halloumi inspiration for tonight. (Old friend dropping by, and, well, I’m not impressing anyone these days.) And I have all the ingredients! Well, not the bread, but barley couscous. And no eggs. Might hit the coriander a little harder- that needs using up. And way too many carrots- think I’ll roast it all rather than grilling. Less likely to set off the smoke alarm, too. And many cherry tomatoes- why not?
Oooh, I want it NOW! Which is exactly what Lauren’s saying…
